We have a famous saying in French that is ” Everything that ‘s small is cute”and that is why I am going to share with you this recipe and if you promise to read it carefully you will probably get the most puffy and buttery mini madeleine ever !
This recipe is from the book “Mini madeleines” of Sandra Mahut – Marabout
For 28 Mini Madeleines
Préparation : 10 mn
Cooking time : 6 à 10 mn
- 150g of plain flour
- 125g butter
- 150g sugar
- 2 glarge eggs
- 2 large teaspoon of milk
- 1 small teaspoon of baking powder
Mix the eggs and sugar to obtain a white mixture
Add gently the flour and baking powder and then the melted butter followed with the milk.
Add your favorite flavour (mine is lemon and poppy seed)
Leave it to rest for 30mn in the fridge (idealy the whole night)
Cooking time :
Pre-heat your oven at 220 C (th7-8). Place a teaspoon of the mixture in each case
Once in the oven, leave it to cook for about 3 to 4 min and turn your thermostat at 180 C (6) before letting it cook for another 3 to 6 mins. Check on them as every oven is different.
TIPS ; if you want to get puffy madeleines, make sure that your mix is very cold against your very hot oven.
